The Valley of Roses: Inside Morocco’s Annual Rose Harvest

For two or three weeks each spring, the small town of Kalaat M’Gouna and the villages behind it become the centre of Morocco’s rose economy — an intense picking season, a small distillation industry, an annual festival, and a landscape that runs the rest of the year at a much quieter volume.

The Valley of Roses is not, strictly, a single valley. It is a network of related valleys — the Dades, the M’Goun, and the smaller wadis that feed into them — running east and west along the southern flank of the High Atlas in the Tinghir province of southeastern Morocco. Its administrative centre is the small town of Kalaat M’Gouna, roughly 330 kilometres east of Marrakech and 90 kilometres from Ouarzazate. The valley sits at an altitude of about 1,400 to 1,500 metres, in the transition zone between the mountains and the pre-Sahara.

What makes this region the Valley of Roses is a specific agricultural practice: the growing of Damask roses (Rosa damascena) as hedgerows along the edges of irrigation channels and around agricultural plots. In April and May, when the roses bloom, the whole landscape briefly changes character — the pink hedgerows come alive, the picking begins, small distilleries fire up, buyers arrive, and the valley becomes the centre of Morocco’s rose water and rose oil production. Then, over a matter of weeks, the harvest ends, the roses fade, and the valley returns to being an ordinary Moroccan agricultural region for the rest of the year.

This article is about that rose year: the tree, the labour, the distillation, the annual festival, and the economic geography of one of Morocco’s most specific rural industries. The valley

The Dades and M’Goun valleys have long been known for a specific combination of geography and agriculture. The rivers descending from the High Atlas cross an arid pre-Saharan zone, creating narrow corridors of irrigation-fed cultivation between rocky slopes. The soil is sandy and alkaline. Nights are cool; days are warm and dry. The air is generally clean of humidity and of urban pollution. These conditions are close to ideal for aromatic plants that concentrate volatile compounds in their flowers, and they are why the Damask rose has thrived here.

Kalaat M’Gouna itself is a small town of a few tens of thousands of inhabitants, most of them Amazigh, with a working local economy based on agriculture, small commerce, and — for two or three weeks a year — the rose harvest. The town has grown modestly over recent decades but retains the character of a rural centre rather than a tourist destination. Its Berber name has variants; the current standard spelling in Latin script is Kalaat M’Gouna, though Kelaat M’Gouna and other transliterations appear in older sources.

The Damask rose

The rose grown in the valley is the Damask rose, Rosa damascena, also known in some sources as the Persian rose. It is a specific old cultivar, prized worldwide for the concentration of aromatic compounds in its petals and for the round, complex character of its scent. It is also grown at commercial scale in Bulgaria (the Valley of Roses in Kazanlak), Iran, Türkiye and other locations, and each region’s roses have subtly different chemistry due to soil, climate and cultivation practice. The Moroccan Damask rose is close to but not identical with its Bulgarian counterpart.

Damask rose plants are typically cultivated as hedgerows or short shrubs, kept two to three metres tall. In the Dades Valley they are planted along the edges of small agricultural plots and along irrigation channels, where they serve the additional practical purposes of marking boundaries, holding soil, and providing seasonal pollinator forage. They are cultivated by a large number of small farmers rather than by a few large estates — this diffuse production geography is one of the defining features of the valley’s rose economy.

A short history

The introduction of Damask rose cultivation to the Dades Valley is not documented in a single reliable historical source. Local oral tradition offers various accounts, some placing the introduction with pilgrims returning from the Hejaz in earlier centuries, some with commercial actors in more recent periods. What is well-documented is the establishment of the modern commercial rose water industry in the twentieth century: the first substantial distilleries in the town date from the 1930s, with French colonial commercial interest driving the shift from purely household cultivation to organized commercial production.

Since Moroccan independence in 1956, the industry has continued to develop in the hands of a mix of local cooperatives, private producers, and — more recently — international perfumery buyers. Cooperatives, many of them women-led, have become an important part of the sector since the 1990s, in parallel with similar developments in the argan sector further west.

A note on historical claims

English-language guidebooks sometimes give confident dates for the introduction of Damask rose to the region — the tenth century is a common claim, as is “over a thousand years.” The archival record does not support these confident datings. What can be reliably said is that household rose cultivation predates the modern commercial industry, and that the industry itself is a phenomenon of the twentieth century onward. The rose year

A rose bush in the Dades Valley works on a slow cycle. In autumn, after the harvest, the plants are pruned. Through the winter they are dormant, protected by the natural cold and by minimal irrigation. In early spring, as temperatures rise, buds form. By April, depending on the year’s weather, the first blooms open. The main harvest window falls between mid-April and mid-May, with regional variation of a week or two either way — higher-altitude villages harvest slightly later than lower ones. After the harvest the plants continue to grow through summer, storing energy for the following year’s flowering.

The economic year for a rose-growing household is heavily concentrated in the harvest weeks. Income arrives in a burst; the rest of the year’s work — pruning, weeding, occasional irrigation — is less intensive and unpaid in the immediate sense. This concentration is why the harvest weeks matter so much and why the annual festival at Kalaat M’Gouna carries the weight it does.

The harvest itself

Rose picking has to happen at dawn. This is not folklore. The volatile aromatic compounds that make the flowers valuable — the citronellol, geraniol, phenylethyl alcohol and their relatives — evaporate rapidly once the sun rises. A rose picked at seven in the morning yields significantly less oil than the same rose picked at four. Pickers therefore begin work in the pre-dawn dark and continue until the sun is fully up, usually finishing between eight and ten depending on the day.

The technique is straightforward. Individual open flowers are pinched off at the base of the petal cluster, with fingertips rather than tools, and dropped into a cloth or plastic sack. Rose thorns are real; experienced pickers wear long sleeves and move quickly to minimize contact. A single person can pick between three and six kilograms of fresh petals in a morning depending on the density of the flowering and their experience.

The picked flowers are consolidated in the village or at collection points near the fields, weighed, and moved to distilleries within hours. The freshness of the material at the moment of distillation is the single most important variable in the quality of the final oil and water. Flowers left overnight, or transported too far, lose value that cannot be recovered later.

Who does the picking

Rose picking in the Dades Valley is predominantly done by women, either from rose-growing households themselves or hired from nearby villages for the harvest weeks. Children sometimes participate — in some communities this is a traditional part of the harvest, in others it is discouraged or forbidden — and men participate variably, often with support roles (transport, weighing, security) rather than picking itself.

Wages during the harvest are typically paid by weight of picked flowers, with day rates and cooperative arrangements varying by village and by the specific relationship between picker and distillery. In cooperatively-organized villages, picking may be organized collectively, with pooled income distributed by cooperative rules; in more informal arrangements, individual pickers sell to intermediaries or directly to small distilleries.

The labour is intense during its short season. A dawn start, several hours of stooping and reaching among thorns, careful transport of very perishable material — this is real agricultural work, not a picturesque country activity. Distillation

The distillation of rose material in the valley uses two related processes. The first, older and simpler, is hydro-distillation: fresh petals and water are placed together in a copper still, the water is brought to a boil, and the steam that rises through the mass carries the aromatic compounds up and into a condenser. The condensate separates into a large volume of rose water and a small floating layer of essential oil (rose otto). The second process, solvent extraction, uses a chemical solvent (typically hexane) to extract the aromatic compounds directly from the petals; the solvent is then removed to leave a waxy paste called rose concrete, which is further processed into an absolute. This method captures more of the flower’s aromatic profile but produces a product used almost exclusively in perfumery, not as rose water.

Traditional and small-scale operations in the valley use hydro-distillation; larger commercial operations may use solvent extraction as well. Both are legitimate industrial processes; both produce genuine rose products. What distinguishes them is chemistry and use, not authenticity.

Rose water, concrete, absolute, otto

Four related products, one flower

Rose water (ma’a al-ward)
The abundant aqueous distillate from hydro-distillation. Faintly floral, mildly astringent, food-safe at culinary dilution, used across the country as a hospitality and kitchen material.
Rose otto
The small essential oil layer skimmed from hydro-distillation. Very expensive by weight; used primarily in high-end perfumery and skincare. A kilogram of oil requires several thousand kilograms of fresh petals.
Rose concrete
The waxy solid produced by solvent extraction. An intermediate perfumery material; further processed into absolute.
Rose absolute
The refined product of concrete extraction, alcohol-soluble, used in perfumery. Different chemical profile from otto; different applications.

For the household consumer of rose water, only the first is directly relevant. But it is worth understanding the wider industry, because the presence of the perfumery buyers of otto and absolute in the valley is what sustains the economics of the wider rose sector — the small growers who supply the family kitchen also, through cooperatives and intermediaries, ultimately supply the perfumeries of Grasse.

The Moussem des Roses

Each spring, at the peak of the harvest, Kalaat M’Gouna hosts the Moussem des Roses — the Rose Festival — typically over three or four days in early to mid-May. The exact dates shift year to year to align with when the roses actually bloom. The festival has been held for several decades and combines a working agricultural market with a genuine community celebration.

The commercial side of the festival is straightforward: cooperatives display their production, buyers place orders for the coming year, agricultural conferences discuss the state of the industry and the challenges facing it (water, climate, labour). The community side involves music, parades, a coronation of a symbolic Rose Queen chosen from the surrounding villages, and public tastings of rose-scented products. Visitors are welcome; the audience the festival is primarily addressed to is the growers themselves.

Reading the festival correctly matters. It is neither a purely commercial trade fair nor an “ancient sacred ritual.” It is a working farmers’ festival with a tourism dimension, held at the end of a hard picking season, and it should be read on those terms. Cooperatives and the labour question

The cooperative sector in the Valley of Roses developed in parallel with the argan cooperative movement further west, and in some respects is more evenly rooted. Rose cooperatives — most of them explicitly women-led — coordinate picking, distillation, packaging and sales for a network of small growers, and negotiate collectively with buyers whose scale would otherwise dominate individual growers. Several of these cooperatives hold recognized international certifications (Fair for Life, Ecocert Fair Trade) and publish auditable information about wages, membership, and value distribution.

Not every rose-labelled cooperative in the region is equally transparent or equally cooperative in fact. Some are effectively wage-employer relationships wrapped in cooperative branding; some are quite small and have limited scale for meaningful collective bargaining. As with argan, the useful consumer signals are named cooperatives, third-party audits, and public documentation rather than the cooperative label alone.

The wider labour question in the valley is not primarily about rose picking, which is a short and specific seasonal task. It is about the year-round agricultural work of rose bush maintenance, which is unpaid family work in most cases. This is invisible from the outside — the tourism season concentrates on the harvest weeks — but it is the substance of what makes the industry sustainable. Households that plant, prune, weed and irrigate their rose hedgerows through the year make the harvest possible; the labour is not paid because the plants are theirs and the harvest income comes as a lump sum in May.

Tourism

Tourism in the Valley of Roses is real but modest compared with the concentrations at Marrakech, Fez or the coast. It is concentrated in the harvest weeks and around the festival, with quieter shoulder seasons. Riads, guesthouses and small hotels in and around Kalaat M’Gouna cater to visitors specifically interested in the rose harvest, in the Dades Gorges immediately to the east, and in the wider circuit that includes Ouarzazate, the Draa Valley and the Merzouga dunes.

The relationship between tourism and the rose economy is complicated. On the one hand, tourism has helped support the wider valley economy and has raised the visibility of Moroccan rose products internationally; it has also increased demand for specific quality product from local buyers. On the other hand, tourism-oriented sales channels can be misleading — small shops selling “rose oil” at prices that would be impossible for genuine otto, or “rose water” made with a fraction of the true distillate. Buying from named cooperatives, or directly from established distilleries with public documentation, is the more reliable path for visitors.

Climate pressures

The Damask rose is a robust plant, but it is not indifferent to climate. Two pressures are visible in the Dades Valley over recent years.

The first is water availability. The valley’s roses are cultivated with irrigation from Atlas snowmelt-fed rivers, and the reduced snowpack and more erratic rainfall that Morocco has experienced over recent decades have made water increasingly scarce. Some growers have shifted to more efficient irrigation methods; others have reduced their rose acreage; the industry-wide response is still emerging. The second is timing. As spring warming has become less predictable, the flowering window has shifted year to year in ways that make labour organization harder. A harvest that arrives a week earlier or later than expected has real consequences for the availability of pickers and for buyer logistics. Growers and cooperatives are adapting; the adaptation is ongoing.

Neither pressure is unique to the Dades Valley; both are shared with rose-growing regions worldwide. But the specific combination of small growers, narrow harvest window and altitude-dependent water supply makes the Moroccan rose industry particularly exposed. Markets and the regional economy

The Valley of Roses supplies three overlapping markets: domestic household rose water in Morocco; the international rose-water market for beauty and culinary use; and the high-end perfumery market for rose otto and absolute. Each market has different price sensitivities, different quality specifications, and different relationships with the growers.

The domestic market is the most stable and the least price-sensitive, but it is also modest in per-litre value compared with the perfumery market. The international rose-water market — beauty products, hospitality, culinary — has grown substantially in recent decades and represents a significant income source for cooperatives that can meet its quality and packaging expectations. The perfumery market pays the highest per-kilo prices but represents a small volume, is concentrated in the hands of a few global buyers, and can shift quickly with international perfume industry trends.

For the individual grower, this three-market structure has both advantages and vulnerabilities. In a good year with strong demand across all three, income is high. In a bad year — climate reduces yields, or a perfumery buyer shifts sourcing to Bulgaria or Iran — the concentration of income risk becomes clear. Cooperatives that have diversified their customer base tend to be more resilient than those tied to a single buyer.
