Argan Oil: Morocco’s Liquid Gold Explained
An oil pressed from the nut of a slow-growing endemic tree, tended for centuries by rural Amazigh families in the Souss, and now the object of a global cosmetics industry — argan is a good subject for anyone who wants to understand how a Moroccan household staple becomes a commodity.

“Liquid gold” is the phrase every English-language guide to argan oil eventually uses, often in the first paragraph. It is not a Moroccan phrase, and it flattens an interesting subject into a marketing line. The interesting subject is a small, thorny, endemic tree that grows only in the southwestern corner of Morocco (and a small satellite population in Algeria’s Tindouf region); a rural landscape that has been managed as agro-forestry for centuries; a rural economy that has been reorganized around women’s cooperatives since the 1990s; and a cosmetics industry that has grown fast enough to affect both the tree and the people who tend it.
This article is about the tree, the oil, the household, and the industry. It tries to explain what argan actually is and what it can reasonably do, without repeating the “ancient secret” language that surrounds it in most tourism copy. The tree and its landscape
Argania spinosa is a slow-growing, drought-tolerant tree endemic to a specific band of southwestern Morocco between the western High Atlas and the Anti-Atlas, opening westward to the Atlantic. It grows from sea level up to about 1,500 metres. It tolerates temperatures reported to reach 50 °C in the hottest weeks of summer, requires little rainfall to survive, and roots deeply enough to draw water from below the surface layer of arid soils. This is why it has been described, accurately, as the last woody line before the desert.
The trees are widely spaced, twisted, low, and armed with small hard thorns. They produce a green, almond-shaped fruit that ripens on the tree to a dry olive-yellow. Inside the fleshy pulp is a very hard nut; inside the nut is one to three small oil-rich kernels. Getting from tree to oil requires opening every nut individually — a fact that determines almost everything about the rural economy that has grown around the tree.

Goats climb into the branches of the argan tree in a way that has become one of the iconic images of southwestern Morocco. The image is real; the mechanism is that goats eat the fleshy fruit whole and pass the hard nuts, which are then collected. In more recent decades some enterprises have taken to placing goats in trees for tourists to photograph — a practice largely staged for the road. Traditional argan-goat interaction is real but seasonal, and photographs of goats permanently perched in trees on major routes should be read with scepticism.
Historical and household uses
Argan has been part of household life in the Souss and neighbouring regions for centuries — culinary, medicinal, cosmetic, and material. The wood is dense and burns hot; the pressed cake left after oil extraction is used as animal feed; the shells are burnt as fuel. The oil itself is used in cooking, poured over bread with honey, mixed into amlou (a paste of argan oil, roasted almonds and honey), and rubbed onto skin and hair.
These uses are not new. Descriptions of argan cultivation and use appear in North African sources across the medieval period, and the tree is referenced in Amazigh agricultural knowledge that predates written record-keeping. What is newer is the international export of the cosmetic form, which took shape gradually from the mid-twentieth century onward and accelerated sharply in the 1990s and 2000s as Western cosmetics companies became interested in the oil’s properties.
The UNESCO Representative List of the Intangible Cultural Heritage of Humanity added “Argan, practices and know-how concerning the argan tree” in 2014, recognizing the tradition as a cultural practice rather than only an agricultural product. The FAO recognized the argan-based agro-sylvo-pastoral system in the Ait Souab-Ait Mansour area as a Globally Important Agricultural Heritage System in 2018. The UN declared May 10th as the International Day of the Argan Tree in 2021, following a Moroccan-led resolution co-sponsored by 113 member states.
Culinary vs. cosmetic argan
The two oils are not the same. Both are pressed from the same kernels, but the process differs in one crucial step, and it is worth spelling out.

Two oils, one kernel
- Culinary argan
- The kernels are gently roasted before pressing. This produces an oil with a rich, nutty, sesame-adjacent flavour used in Moroccan cooking, poured over salads, drizzled over bread, mixed into amlou. Its shelf life is around six months.
- Cosmetic argan
- The kernels are pressed unroasted. This produces a lighter, milder oil with a faint, buttery smell, used for skin and hair. Its shelf life is around one to two years unopened.
The two oils are not interchangeable. Cosmetic argan on food tastes flat; culinary argan on skin smells too strong. Reputable producers label the two separately; a jar simply labelled “argan oil” without qualification is more likely to be a low-grade producer than a virtue.
Traditional production
The traditional method has changed in details over time but the basic sequence is stable. The fruit is collected after falling from the tree or being passed by goats. The dried pulp is removed. The hard nuts are cracked, one by one, between two stones — a task that has historically been done by women and remains predominantly women’s work. The kernels are extracted, sometimes roasted (for culinary oil), then ground by a hand-turned stone mill. Water is added to the ground paste, which is then kneaded by hand for a considerable time until the oil separates and can be poured off.
The yield is small. Estimates in the ethnobotanical and cooperative literature suggest that producing one litre of argan oil traditionally requires the kernels from tens of kilograms of dried fruit and a working day or more of labour. This is the fundamental reason argan oil is expensive, and why any commercial product sold cheaply should be examined carefully.
Cooperatives and women’s labour
From the late 1990s onward, the Moroccan government and several NGOs supported the formation of women’s cooperatives — most notably in and around Essaouira, Agadir, and the Souss valley — to formalize argan production, add value locally, and offer wages and social protection to women who had historically done the work for informal or family compensation. The cooperative model is genuine but uneven. Some cooperatives are well-organized, offer literacy classes and health insurance, and pay meaningfully above the informal rate; others are less so, or are cooperatives in name only, controlled by external buyers.

Academic assessments of the cooperative system have been mixed. Studies have found that formalization has raised incomes in many cases but that women’s cooperatives capture a small fraction of the final export value, and that mechanization — cracking machines that reduce the manual labour of nut-cracking — has actually reduced the working hours available to women in some cooperatives. Assessments in agricultural and development journals continue to weigh these trade-offs.
A reasonable consumer position is not to romanticize the cooperative label as automatically transformative but to prefer producers who publish auditable information about their cooperative relationships, wages, and value distribution. What “cooperative” means, in practice
Not every product bearing a cooperative or “women-produced” label is equivalent. Some are producer cooperatives with genuine collective ownership; some are wage-employer relationships wrapped in cooperative branding. The most transparent producers publish independent audits (Fair for Life, Ecocert Fair Trade) and name the specific cooperative or union of cooperatives supplying the oil.
Modern industrial processing
Alongside cooperative production, a substantial industrial argan sector has grown, particularly around Agadir and Essaouira. Industrial extraction uses mechanical cold-pressing rather than hand-kneading, and produces oil with a longer shelf life and more consistent chemical parameters. It is not, in itself, a lesser product; a well-run cold-press facility can produce oil equivalent to hand-kneaded oil, and often at more predictable food-safety standards.
The important distinction is not “traditional versus industrial” but “genuine versus adulterated.” Industrial cold-pressed 100% argan oil is genuine. Argan oil diluted with sunflower or soybean oil, or extracted with heat and chemical solvents and then refined, is not. Both exist on the market; only the first is what people are paying for when they buy argan oil.
The chemistry, plainly
Argan oil is composed roughly of 42–48% oleic acid (a monounsaturated omega-9), 30–36% linoleic acid (a polyunsaturated omega-6), 12% palmitic acid, and small proportions of other fatty acids. It contains tocopherols (vitamin E) in higher concentrations than most cooking oils, as well as phytosterols, particularly schottenol and spinasterol, which are unusual and characteristic of the oil. It contains no vitamin A, no vitamin C, and no proteins.
What this composition means, for skin and hair, is fairly predictable. Oleic acid is a good conditioning fatty acid; it absorbs relatively well and softens the skin barrier. Linoleic acid is beneficial for skin barrier repair and is often underrepresented in the skin of people with dry, sensitive or acneic conditions. Tocopherols are antioxidants. The phytosterols contribute to the oil’s slightly emollient, non-greasy feel.
This does not mean argan oil is a cure for anything. It is a good, well-tolerated plant oil with a slightly unusual composition and a very high price per litre. Marketing claims about miraculous anti-ageing effects, regrowing hair, healing wounds, or dissolving scars are not supported by evidence proportionate to their strength.
Reasonable skin and hair uses
What argan oil does well, based on its composition and the modest clinical literature on it:
- Facial moisturizing for normal to dry skin. Two or three drops smoothed into damp skin after cleansing. Well tolerated by most; unlikely to clog pores, though very acne-prone skin may prefer lighter oils.
- Hair conditioning, especially on the ends of dry or coarse hair. A few drops rubbed between the palms and worked through mid-lengths to ends. Not a substitute for washing.
- Nail and cuticle care. Traditional use, and reasonable.
- Post-hammam skin. After the exfoliation of a hammam session the skin absorbs oil unusually well; argan is well suited to this use.
- Massage. As a base oil for slow massage rather than deep-tissue work; it is light and absorbs before it lingers.
What it does not reliably do: erase wrinkles, regrow lost hair, heal deep scars, or reverse sun damage. Anyone selling it primarily on these claims is selling marketing, not oil.
Amlou and the household kitchen
Of all the uses argan finds inside Moroccan households, amlou is the one that most cleanly expresses its status as a staple rather than a luxury. It is a paste of culinary (roasted-kernel) argan oil, roasted almonds and honey — three ingredients, all local to the argan-growing regions of the Souss and the Anti-Atlas. The nuts are roasted and ground; the oil binds them into a smooth, thick paste; the honey sweetens it. It is served for breakfast, spread on bread with mint tea, or offered to guests as a mark of hospitality in the way an Italian family might offer a good olive oil to a visitor at their table.
Amlou is not a niche product; in argan-growing households it is a normal Sunday-morning food. Its presence is one of the more useful indicators of where argan fits in local life — as ingredient, not as elixir. A well-made amlou tastes primarily of roasted nuts and honey, with argan oil as the mineral, slightly bitter thread running through it. The oil quality shows itself immediately: a poor culinary argan produces a flat, greasy paste; a good one produces something that reads as a specific and distinct food.
Argan oil also finds its way onto salads, into slow-cooked tagines toward the end of cooking (heat destroys most of its flavour, so it is added late), and — sparingly, and only in the argan-growing region — over couscous. Outside that region its culinary use in Moroccan cooking has always been more limited; olive oil is the default cooking fat across most of the country, and argan remains regionally specific.
Authenticity and adulteration
Argan oil is one of the more frequently adulterated cosmetic oils on the international market. Sunflower and soybean oil are the most common diluents, and cosmetic-grade argan oil is sometimes cut with them by percentages that can be very high before the product ceases to look and behave “close enough” to real. Practical markers of authenticity:
- Colour. Pure cosmetic argan is a pale, warm yellow — the colour of a good white wine. Very pale, near-clear oil has often been refined or diluted; deep golden-brown suggests culinary oil, not cosmetic.
- Scent. Cosmetic argan has a very faint, buttery-nutty smell. Strong nutty smell = culinary oil. No smell at all = probably diluted or deodorized.
- Feel. Absorbs within a minute or two on the back of the hand, leaving skin soft but not slick. Diluted oils tend to sit on the surface.
- Price. A litre of genuine cold-pressed cosmetic argan oil at wholesale in Morocco is not a cheap product. A 30 ml bottle sold in Europe for a very low price is almost certainly not what it says on the label.
- Origin. Real producers name the region and often the cooperative. A generic “Made in Morocco” without regional detail is a soft signal.
Sustainability and pressure
The argan forest is under pressure. This is not a new development. The Arganeraie was declared a UNESCO Biosphere Reserve in 1998, covering roughly 2.5 million hectares across southwestern Morocco. The Reserve was created explicitly to address concerns about desertification, overgrazing, agricultural clearance, and — increasingly — the intensification of harvesting driven by international demand. The relevant point for the oil consumer is that responsible sourcing is not a nice-to-have but a structural question. High demand for argan oil, in principle, funds the rural economy that sustains the tree. In practice, it also incentivizes overharvesting, illegal grazing, and — where mechanized cracking has displaced local labour — the loss of the very household economy the UNESCO designation is intended to protect. There is no shortcut through this; the responsible buyer pays more, buys less often, and reads the labels.
Reforestation programmes have been running in the Souss for the past two decades, some led by the Moroccan state through its National Agency for the Development of the Oases and the Argan Tree, others through cooperative initiatives with international support. Planting an argan tree is easy; getting it to survive the first ten years of drought and grazing pressure is not. Mature argan trees are the ecological asset — they can live for a century and a half or more — and their protection matters more, in the short term, than raw planting numbers. Any consumer who cares about the tree should read the sustainability language of a producer with that distinction in mind.
A last note on “liquid gold”
The phrase is used in almost every English article about argan oil, and it does describe a fact about global market prices. But it does not describe how the oil is regarded in the households that make it. There it is a food, a medicine, a hair dressing, and — usefully — an ingredient in amlou. The phrase to prefer, if a slogan is needed at all, is a rougher one: argan is a household staple that became a commodity, and the household knows the difference.
