Black Soap, Kessa & Rhassoul: Understanding the Hammam Ritual
Three ordinary materials — a soft olive-oil soap, a woven glove, a mineral clay from the Middle Atlas — do most of what the hammam is famous for. Understood separately, they explain a ritual whose logic has been obscured by decorative writing.

The Moroccan hammam is often described in English as a mystery. It is not. It is a room, a rhythm and three materials — a soft olive-oil soap called savon beldi, a coarse woven mitten called a kessa, and a mineral clay from the Middle Atlas called rhassoul (or ghassoul). Everything else the hammam does — the heat, the pace, the social element — is atmosphere and infrastructure. The physical effect on the skin comes from these three, used in a particular order.
This article separates them out and explains each on its own terms: what it is, where it comes from, how it works, how to tell it from a lesser version. Read together with our longer article on the traditional hammam and the home adaptation guide, this piece is the mechanics.
Three materials, one sequence
The sequence in a traditional Moroccan hammam is: heat, then savon beldi, then rinse, then the kessa, then rinse, then rhassoul, then rinse. Each material prepares the way for the next; using them out of order, or on their own without the others, undoes most of what makes the ritual effective. This is worth stating explicitly because a large number of Western beauty guides present the three as separate “products,” each with its own set of benefits, when in practice they are three parts of a single method.

Savon beldi: what black soap actually is
The word beldi in Moroccan Arabic means “of the country” — traditional, local, made in the old way. Savon beldi is Morocco’s traditional bath soap, made from olive oil (and, in the fuller versions, olive fruit paste) saponified with potassium hydroxide. The result is a soft, gel-like paste that ranges in colour from deep olive green to a dark, near-black brown. The colour is where the English name “black soap” comes from; it is not the descriptive Moroccan name.
Chemically, savon beldi is what soap-makers call a soft potassium soap, distinct from the hard sodium soap of bar soaps. Potassium hydroxide (KOH) reacts with the fatty acids in olive oil to produce potassium oleate — the main soap compound — and glycerin. In traditional formulations the reaction is not fully saponified, leaving unreacted olive-oil compounds in the finished paste and giving it its softening properties. Some regional recipes also include ground olive stones or ground eucalyptus leaves, though eucalyptus is a modern addition; the plant is not native to Morocco.
Authentic savon beldi has a short ingredient list. In an unadulterated form it is olive oil, olive paste, water, and potassium hydroxide, with sometimes a small quantity of eucalyptus or bay laurel added. It has an earthy, tangy-olive smell — not perfumed, not floral — and a consistency somewhere between honey and thick jam. The colour is dark green-brown; a suspiciously bright green or pitch black often indicates dye.

“Black soap” — a linguistic mess
The English phrase “black soap” is not helpful, because it covers at least three distinct products from different regions:
- Moroccan savon beldi — soft olive-oil paste, as described above. This is the soap used in Moroccan hammams.
- African black soap (ose dudu) — a solid, hard soap from West Africa, particularly Ghana and Nigeria, made from plantain skin ash, palm ash, and cocoa pod ash with palm and coconut oils. Completely different history, method, and effect.
- Commercial “black soap” bars — Western cosmetics products, often coloured with charcoal or ash and marketed with vague reference to either or both of the above.
Only the first is Moroccan. When Moroccan writers refer to the hammam’s black soap, they mean savon beldi. Buying an African black soap bar or a charcoal-scented bar and expecting the hammam ritual to work is a category error.
How the soap works on skin
Unlike ordinary bar soaps, savon beldi is not primarily a lifting cleanser. It does clean, in a mild way, but its role in the hammam ritual is preparative: it softens the outer keratinized layer of the skin — the stratum corneum — so that the dead cells at the surface can be removed cleanly with the kessa. Without this softening step, the kessa scrapes across dry cells and produces mostly redness. With it, the kessa lifts a visible layer.
The mechanism is not exotic. Olive oil is rich in oleic acid, a fatty acid that intercalates readily into the lipid matrix of the skin’s surface, and the fermented olive components — polyphenols, remaining pulp — carry additional compounds that slightly loosen the bonds holding dead cells together. Time matters: five to ten minutes is enough for the soap to soften the skin; thirty seconds is not.
The kessa glove
The kessa (sometimes spelt kis or keese) is a woven mitten used to exfoliate the whole body. Historically the fibre was raw crêpe silk or goat-hair; modern kessas are usually made from a stiff, coarse viscose weave with a similar texture. The glove slides over the hand and is used with firm, even strokes on damp, softened skin.
Two things distinguish a good kessa from a bad one. The first is stiffness: a truly effective kessa is uncomfortable to slide dry across the skin. The second is the weave direction — the fibres should be tight enough to catch loose skin without breaking or shedding. A kessa that flops in the hand or sheds after a few uses is not authentic; it is a soft washcloth in the shape of a glove.
Kessa technique is worth spelling out because it is easy to overdo. Firm pressure, not violent pressure. Long strokes down a limb rather than aggressive circles. The dead skin lifts in visible, thin small rolls; there should be no bleeding, and no red raw patches, only a light flush. Facial skin is too thin for a kessa; use fingers with a small dab of soap instead.
Rhassoul, the Atlas clay
The third material in the sequence is different in kind. Rhassoul (Arabic ghassūl, from a root meaning “to wash”) is a mineral clay, not a soap, and it is mined from a single deposit at Jbel Rhassoul in the Boulemane province of the Middle Atlas — reportedly the only significant natural deposit of this specific clay in the world. Its chemistry is unusual: it is dominated by stevensite, a magnesium-rich smectite clay, with additional minor phases including sepiolite, dolomite, and gypsum. The rock formed by diagenetic transformation of dolomite in a Tertiary lacustrine environment — that is, in a shallow inland lake or brackish basin that dried and buried its clay over geological time.
What makes rhassoul distinctive in use is its cation-exchange capacity. In practical terms, it binds strongly to oils, dirt and mineral impurities on the skin and hair, drawing them out without stripping the skin’s own moisture in the way a detergent would. When mixed with warm water it forms a smooth, thixotropic paste that spreads easily and rinses cleanly. It has been used for centuries as a hair wash and body treatment in the region, and the first Western scientific report on the material appeared in the mid-nineteenth century.

The sequence, and why order matters
The order of use is not arbitrary. Here it is, with the reason for each step.
Heat
Warms the skin, softens the surface, opens the pores. Everything after this depends on it.
Black soap, left on for 5–10 minutes
Further softens the outermost skin layer chemically, using olive-oil compounds. Skips this step and the kessa becomes an abrasive rather than a lifter.
Rinse
Removes the softening film, leaving the loosened dead layer ready to be scrubbed off.
Kessa exfoliation
Physically lifts the softened dead cells in visible rolls. Because the skin has been prepared, less force is needed and less irritation results.
Rinse
Removes the exfoliated material from the skin and hair.
Rhassoul
Applied as a paste, left for 5–10 minutes. Binds to any remaining oils and impurities and settles the freshly exfoliated skin without stripping.
Final rinse and oil
Warm rinse cooling to lukewarm. The skin is finished with a small amount of argan oil or another gentle plant oil, which the freshly resurfaced skin absorbs readily.
Skip any of these stages and the ritual is diminished but not destroyed. Reorder them significantly — scrubbing before softening, applying clay to unwashed skin — and the whole thing becomes something else, and less effective.
Sourcing and quality
Materials matter more here than they do in a cosmetic ritual driven mainly by packaging. Below are practical markers.
Savon beldi
- Ingredient list should be short: olive oil, water, potassium hydroxide, and optionally olive pulp or a plant essential oil.
- Colour: dark olive green to deep brown. Bright green or pitch black is suspect.
- Scent: earthy, olive, mildly tangy. No perfume, no fake vanilla.
- Texture: soft paste, slightly sticky, not runny.
Kessa
- Stiff to the touch when dry. A limp glove is not a kessa.
- Even weave, no loose threads on the working surface.
- Should soften slightly when wet but remain grabby.
Rhassoul
- Colour: reddish-brown to slate-grey. Pure white is almost always kaolin, not rhassoul.
- Texture: fine but slightly sandy, not chalky.
- Origin stated: Moulouya valley, Jbel Rhassoul, Boulemane province.
- Swells markedly when water is added — a gel-like paste forms rather than a dry lump.
A note on olive-based Aleppo soap
Aleppo soap (Syrian, olive- and laurel-based) is often mentioned alongside savon beldi. They share an olive base but differ significantly: Aleppo soap is a hard bar soap saponified with sodium hydroxide and traditionally cured for months, while savon beldi is a soft potash-saponified paste used almost immediately after being made. Aleppo soap is a fine cleanser but does not perform the softening role that savon beldi performs in the hammam sequence.
Each material on its own
Although the three materials are designed to work as a sequence, each has a life outside the hammam that is worth briefly noting.
Savon beldi outside the hammam
Used as an ordinary cleanser without the kessa scrub, savon beldi is a mild, non-stripping body wash suitable for two or three uses a week. It also has a long history as a household cleaning material: Moroccans have used it to wash textiles and rugs, and to prepare the surface of tadelakt plaster during construction. The waterproofing that seals hammam walls is done in part by rubbing the finished plaster with savon beldi, an interaction between the potassium soap and the lime that produces a resistant, water-shedding surface. In this sense the hammam building itself is made partly of the same material used inside it.
The kessa outside the hammam
The kessa is used, in some Moroccan households, on a weekly basis in the shower even without the black-soap softening step, though with lighter pressure and less coverage. This is a milder exfoliation than the full hammam scrub and appropriate for people who find the full sequence too intensive. On its own it should be used on wet skin only, never dry, and never on the face.
Rhassoul outside the hammam
Rhassoul is used as a stand-alone hair wash by many Moroccan households, without any of the rest of the ritual. Applied as a paste to wet hair for five to ten minutes and rinsed thoroughly, it functions as a mineral shampoo — cleansing by adsorption rather than by surfactants. It is also used as a facial mask, with fingertips or a soft brush, at a thinner consistency than for the body. Face masks with rhassoul are typically left for no more than ten minutes and are followed by a proper moisturiser.
Sensory notes
Each material has a distinctive sensory profile. Savon beldi smells earthy — olive-tinged, with a faint tang from the fermented pulp — and feels sticky-slippery in the hand until it warms and spreads. A kessa on damp skin has a specific, catching drag that is unfamiliar the first time but becomes recognisable. Rhassoul, when mixed with warm water, smells of clean mineral clay — closer to warm stone after rain than to any perfume — and feels smooth, almost silken, as it dries slightly on the skin. These sensory markers are not incidental. In Moroccan households, they are how the materials are recognized: a person familiar with the ritual can tell whether the rhassoul is fresh, whether the black soap has been diluted, and whether the kessa is worn out, from feel and smell alone.
Common misuse
Almost all first-time errors with these materials fall into one of the following categories.
- Rushing the soap. Applying savon beldi and rinsing it off within a minute defeats the softening step. The kessa is then working on unsoftened skin.
- Scrubbing too hard. The point is to lift the softened outer layer, not to remove skin. Redness beyond a light flush is a signal to stop.
- Using the kessa on the face. The facial skin is thinner and more delicate; a kessa is too coarse for it. Use fingertips.
- Using rhassoul without hydration. Applied as a dry powder to skin, rhassoul does very little. It must be mixed with water and left as a paste for its cation-exchange properties to matter.
- Buying “hammam kits” of low quality. Kits assembled for gift shops sometimes contain diluted soap, soft-fibre gloves that do not exfoliate, and clay that is mostly filler. Individual sourcing of each material is usually more reliable.
- Treating the ritual as a peel. Weekly is the traditional cadence and is enough. Twice-weekly full sessions are more likely to compromise the skin barrier than to accelerate any benefit.
Used with restraint and in sequence, the three materials produce the effect they are known for. Used carelessly, they produce redness and disappointment. The ritual is generous with a little patience and unforgiving of hurry.
Storage and shelf life
All three materials keep well if stored sensibly, and all three degrade if not.
Savon beldi keeps for around a year unopened and roughly six months once opened, provided the lid is replaced between uses and the pot is kept away from direct sunlight and prolonged heat. In a warm bathroom the paste can soften and darken; this is not spoilage but it does change the texture. A slight liquefying of the paste is normal in warm storage and does not affect the soap’s function; a foul or sharply sour smell is not normal and is a sign that the paste has been contaminated. Buy the smallest jar you will finish, rather than a large industrial pot that will sit half-used for two years.
The kessa glove keeps indefinitely between uses but wears out with washing. A well-made glove used weekly will last a year or more; a lower-quality glove may shed fibres and soften within a few months. Rinse it thoroughly after each use, wring it out, and hang it to dry — do not store it wet in a shower caddy, where it will stay damp and become a home for mildew.
Raw rhassoul lumps keep almost indefinitely if stored dry and sealed. Powdered rhassoul is more sensitive to moisture and should be kept in an airtight container away from steam. Mixed rhassoul paste — the wet material ready to apply — should be used the same day; it does not keep. Mix small quantities fresh each week rather than large batches in advance.
The pattern across all three is the same: they are simple, robust natural materials that reward reasonable storage and punish neglect. A cool cupboard, a sealed container, a rinsed and dried glove — that is the entire storage regime.
